Himanshu Saini’s restaurants may not be the highest-rated in this year’s guide but his influence can be felt across the restaurant industry in Dubai.
The new incarnation of the original Trèsind, at One&Only Royal Mirage, makes its debut in Gault&Millau with one toque, while his high-concept, limited seating degustation menu restaurant Trèsind Studio has made the leap from two toques to three in the 2023 edition, and is one of only three restaurants to achieve that rating this year. Carnival by Trèsind also continues to impress, also receiving one toque, while his protégé Rahul Rana at Avatara is picking up awards of his own.
Saini’s mission is to make people think differently about Indian cuisine, something he is doing with aplomb.
