There are four dedicated dishes starring the signature ingredient

STAY by Yannick Alléno, which received two toques from Gault&Millau in 2023, has launched a seasonal truffle menu.

The special dishes celebrate white truffle season, which grow wild in the forests of Alba in north-west Italy.

Alléno has crafted a special menu for the occasion starring the prized ingredient. The menu will be available through until the end of January 2024 at the restaurant at the exclusive One&Only The Palm Dubai.

In each dish on the limited-time menu, truffle will take centre stage.

Plates include comté soufflé with white truffle, followed by turbot poached with white wine, or pan-seared veal tenderloin with salsify and Brillat-Savarin cheese with black autumn truffle.

Dessert is a white truffle fuseau – a white truffle scented white chocolate mousse.

The menu is AED1,050 or AED1,700 with a wine pairing.

Meanwhile guests can also try truffle-inspired dishes at the hotel’s Zest, which serves Italian dishes, plus pizzas from a dedicated pizza bar. Diners can add white truffle to any dish for AED90 a gram.
