Pierre’s TT has evolved from its ‘bistro’ roots, emerging as a more daring and avant-garde restaurant over the past year. It showcases the influence of legendary chef Pierre Gagnaire perfectly, thanks in part to restaurant manager Hervé Lorit and chef Mathieu Balbino, both protegés of Gagnaire.
The introduction of a new menu in late 2023 amplified this transformation, elevating the dining experience to new heights. Standout dishes include a jelly of grey shrimp, shellfish, seaweed and leek, and risotto with parsley and poached foie gras, the indulgent dish proving Balbino’s ability to work with classic ingredients while adding something new.
The chef’s exceptional skills and techniques are evident throughout the menu and display a simplified approach to French cuisine that let’s ingredients shine – a perfect reflection of the principles of Gault&Millau. His precise plating and innovative flavours help make Pierre’s TT into one of the best French dining experiences in Dubai.
The wine and Champagne list also contributes towards that. While some bottles may command a higher price than elsewhere, the selection is vast with some unique finds, making it a delight for wine connoisseurs with money to spend.
